That parteth the hoof – The hoof is what the animal stands on. For clean animals they stand on hoofs that are split in two. The symbolism here seems to be that they stand on both the letter and the spirit of God's word. Therefore they are candidates for being clean, i.e., acceptable to eat.
And cheweth the cud – "Cud is a portion of food that returns from a ruminant's stomach in the mouth to be chewed for the second time. More accurately, it is a bolus of semi-degraded food regurgitated from the reticulorumen of a ruminant. Cud is produced during the physical digestive process of rumination. The idiomatic expression chewing one's cud means meditating or pondering; similar expressions such as "he chewed that over for a bit", or "chew on that!" likely have the same derivation." - Wikipedia
Those animals which do both are considered to be clean. What this seems to indicate symbolically is those are clean in the Lord's sight who both stand on the letter and spirit of God's word (part the hoof), AND then ponder the meaning over in their minds (chew the cud.) |

| 26 and thou shalt give the money for whatever thy soul desireth, for oxen, or for sheep, or for wine, or for strong drink, or for whatever thy soul asketh of thee; and thou shalt eat there before Jehovah thy God, and thou shalt rejoice, thou, and thy house. |

| 27 And thou shalt not forsake the Levite that is within thy gates; for he hath no portion nor inheritance with thee. |

| 28 At the end of three years thou shalt bring forth all the tithe of thine increase the same year, and shalt lay it up within thy gates; |

| 29 and the Levite--for he hath no portion nor inheritance with thee--and the stranger, and the fatherless, and the widow, that are within thy gates, shall come, and shall eat and be satisfied; that Jehovah thy God may bless thee in all the work of thy hand which thou doest. |
